There is a good reason we have featured this wine in our exclusive Captain's List selection- it is beyond stunning (which is exactly what we have come to expect from master vintners Christian and Lisa Eddleman of Sylvanus Estate).
From first pour, Longbow Pinot Noir's color is a gorgeous ruby tone with a fruity nose and notes of violets and minerals. The mid-palate has hints of black tea, star anise pastille and a touch of absinthe. The body of this pinot is mid-weight with a beautifully clean finish and good length. The tannins are naturally grippy now and should soften into dense spiced, red fruit preserves with smooth tannins.
If you have the patience to cellar it, expect softer tannins and darker fruit notes, as well as bitter cocoa to come. We recommend opening a bottle or two every year for 3-7 years to see how the wine evolves in the bottle! We suggest pairing with fatty fish, roasted chicken or pasta dishes.
